Clean Eating Flourless Banana Bread Muffins Recipe Yummy!

In an attempt to eat better and feel better I have participated in a 5 Day clean eating challenge. I participate at the beginning of the month and it is for 5 days only. During the challenge you are only allowed to eat clean food, and your day consists of breakfast, a snack, lunch, a snack and dinner. You must also drink a lot of water. An easy rule of thumb is to take your current weight, divide that number by half and that is how many ounces of water you should drink each day. Oh and if you are wondering, clean eating means basically not eating anything that has been processed. An easy rule of thumb is the item needs a label or has things listed in the ingredient list you do not know than it is probably not considered clean. Basically a diet of no sugar, flour, dairy or soda. Mostly vegetables, fruit and meat along with healthy protein. But remember it is only for 5 days! You can do it!

Here is a great yummy recipe that I make often during the month even when I am not participating in the challenge.

Flourless Banana Bread Muffins (serves 4)

1/4 Cup Raw Almond Butter
2 Large Bananas, very ripe
1 Egg
1 Tbsp Raw Honey
1/2 Cup Old Fashioned Oats
1/4 Cup Almond Flour/Meal
2 Tbsp Ground Flaxseed
1 tsp Vanilla Extract
1/2 tsp Baking Soda
1/2 tsp Ground Cinnamon


Preheat oven to 375 degrees and prepare muffin pan by spraying 8 cavities with cooking spray. Set aside. Add all ingredients into a blender and blend on high until oats are broken down and batter is smooth and creamy. Pour batter into prepared muffin pan, filling each cavity until it’s ¾ full. Bake for 10-12 minutes, until tops of muffins are set and a toothpick inserted in the middle comes out clean. Allow muffins to cool in pan for 10 minutes before removing. Store in airtight container.
