Yummy Clean Eating Breakfast Berry Baked Oatmeal Blueberries

I absolutely love this breakfast! I can take no credit for it. I participate in Nicole Gavin's once a month 5 day clean eating challenge and the recipes are always amazing. Click here  for details on how to join her free group.

Here is the recipe. ( I omit the maple syrup, and use fresh blueberries when I can)

Berry Baked Oatmeal (Serves 1)

  1/2 Cup Dry Rolled Oats 

2 Tbsp Plain Greek Yogurt 

3 Egg Whites 

1/4 tsp Vanilla Extract

1/2 Cup Frozen Berries

1 tsp Maple Syrup (optional)

  Heat oven to 375 F. Spray a small glass baking dish with coconut oil. In a small mixing bowl, lightly whisk egg whites with a fork. Add oats, Greek yogurt & vanilla. Stir to combine. Pour into a small glass baking dish and put frozen berries on the top, bake 20-25 minutes. (Baking time varies depending on the shape of your dish) Drizzle with maple syrup, if desired.
